Mahi Mahi

I made Mahi Mahi.  First I made a marinade.
.
Marinade Recipe
Lemon zest
Lime zest
Crushed garlic
Lemon juice
Lime juice
Thinly sliced lemon and limes
3 bay leaves
EVOO
Salt and pepper
Dash soya sauce
Massage the lemon and lime zest and garlic into the fish.  Then put all the ingredients into a plastic bag with the fish.  Leave in the fridge until you are ready to cook.

Then I heated up some EVOO in the skillet and cooked the fish for a few minutes on each side.

Then I ate it!  I also steamed asparagus drizzled with hollandase sauce.  I topped the Mahi Mahi with some slices of lemon and lime that I heated in the skillet with the fish.

  2. You have a very inspiring story! Love your passion for food.
Have you considered talking to your school administers about taking classes via teleconference, facetime, or other media?
Also, since you're this far ahead in learning about food, why not contact the food network about doing a kids cooking show, to compliment your blog...maybe with Alton Brown?
We are all very proud of you. My wife loves the food network as well. My son and daughter love her cooking as well!!!
    Keep up the good work.

  5. I am not a big fan of fish, but I think I will try this one out. Especicially since there are no onions and peppers in it. My husband is deathly allergic :(
We read your story this morning and we were so impressed with your great attitude and fantastic taste in food, I am looking forward to more blogs and more food. Have a Happy Birthday and may you enjoy many, many more.
