Today I tried to make cupcakes they turned out terrible. The inside of the cupcakes were raw and we do not no why so that didn't go well. Then I had to start making dinner. I made meatloaf with creamy mash potatoes and sauteed onion and cabbage with roast carots and parsnip.
I just invented a new recipe. It is fresh diced tomatoes, fresh diced mango, the juice and zest of one orange, and the zest and the juice of 1 lemon, fresh diced pineapple, 1 diced red onion, salt and pepper and EVOO (extra virgin olive oil), spring onion, a dash of garlic powder. Recommended on crackers with butter and cream cheese or with corn chips.

Quiche in a Cup Cake Maker.
Today is the second day of blogging. Today I made mini quiche with my Mom. We made bacon, onion and corn quiche and roast chicken. I used the cupcake maker my friend Maddie gave me when I was in the hospital. I think the quiche had too much flour. I used a recipe from the edmonds cook book which used 1 cup of pancake mix and 2 cups of milk. I think it was too much milk and flour and not enough eggs. My family ate them though.

Saturday 26th Feb, 2011 - first post - yellow cake.
Today I baked a yellow cake with my dad and it turns out all this time I have been decorating cakes wrong, but I learned the right way to do it. You need to let your spatula sit in warm water and keep dipping it in the water.
The cake mix came in a box which I was not happy about but mum was going to the supermarket so I was stuck with dad and the box!
I did have to do a lot of work:
I had to crack 3 eggs
measure the water and oil
and yes I did use the hand mixer but I finished it by hand - so no, I was not cheating was I? You tell me, but hey I'm only a kid but I've got A lot to say about cooking so keep coming back so my grand parents are not my only audience! You can leave me a message but my mum has to check them first so it won't show up straight away.
Icing Recipe:
1 cup of confectioners sugar or if you are a kiwi (like my grandparents)- icing sugar.
a dash of vanilla essence.
a dash of boiling water - be careful because it thins out easily.
a dash of food coloring
for the chocolate I put in cocoa powder instead of food colouring.
