Easter Eggs

Hi   Happy   Easter
Over the weekend we used a lot of eggs which made me wonder; How   do you   know  if an   egg is bad?
One way is to  fill  a bowl  with  water  and  if the  egg  floats  to  the  top  it is bad.  Cool  right?  If you crack an egg and it smells bad, it is probably not good.
You   can   do   so   many   things  with eggs.  You can  make   egg  salad, omelets, hard boiled eggs,  devilled eggs, even  fried eggs.  You can make scrambled eggs - they are so easy.  So  eggs are  very  cool.

Over the weekend I made egg salad here is my recipe:
1 cup of mayonnaise
10-12 hard boiled eggs
Salt and pepper to taste
Finely chopped chives
Finely chopped spring onion (green onion)

We also made pavlova - here is our recipe:

Pavlova - A kiwi desert
4 egg whites
1/4 tsp salt
1 cup sugar

1 tsp vanilla essence
1 tsp vinegar or lemon juice

2 tsp cornflour (corn starch)

Pre-heat oven to 350F
Beat egg whites and salt until stiff peaks form
Gradually add sugar while beating.
Continue beating until stiff.
Add remaining ingredients.
Turn mixture onto baking paper covered tray.
Shape into a circle.

Reduce oven temp to 284 F.  Bake for 15 minutes.
Reduce oven tempt to 240 F and bake for 1 and 1/4 hours
DO NOT OPEN THE OVEN! Although I did when I was hunting for Easter eggs - ours turned out flat but yummy!
Let the oven cool completely before opening.
We have ours with whipped cream and sometimes a berry fruit salad.

    Tina here from Napier.
    Have just watched Rachel Ray.
But I missed what she added so I thought i'd ask you what is half and half flour?
I found her recipes and it just says half and half.
Also Sam is into Moon rock, but over here all I can find is the recipie with coconut in. I was told they are made differently in the usa. was wondering if you could email me a recipie. the one I have is as follows.
    375g selfrasing flour
    185g sugar
    185g butter
    125g coconut
    1 egg
    milk to mix
cream butter and flour add sugar and the coconut mix egg and milk then add
    bake for 15mins.
Any thing you got would be great.
    thank you

  6. Hay Matisse,
just looking at your pav, what do you do with the egg yokes??
I make lemon honey with mine and some times a lemon honey sauce for the top of the pav before smothering it with whipped cream lol.

  7. Dear Matisse,
I went out front this morning and picked up my newspaper and came in and got a cup of coffee, then sat down and divided the paper into the different sections and got the Parade Magazine out which is what I read first. I was touched by your story! The sky is the limit so set your goals high. It seems as though you have achieved so much already. May God Bless you and your family… “Merry Christmas!”

  13. As someone who has a four year old with an adventurous palate I am delighted to read about your passion for food. Every job I have ever had in my 27 years of working has had to do with food, so I too can understand how food fuels your imagination. Keep up the good work, God bless, and continue to fill the people around you with yummy expressions of love created in your kitchen

  19. Oh my land, Matisse, the Pavlova is divine! My 9 year old daughter and I made it together today and we're eating it with lightly sweetened whipped cream and sliced strawberries. The texture is wonderful -- light and crisp, but also chewy and almost creamy in the center. Wow!
My sister found your blog while reading Cooking Light and shared it with the whole family. My older brother has severe chrones disease and is currently on a port-a-cath for TPN for the next few months while hopefully a new medicine helps heal his intestines. It's wonderful to see how much you're able to do despite what you have already been through!
Thank you for sharing what you're learning. I have three daughters (the oldest is 9) and they enjoyed reading your blog too!
